Olives Atlantis offers a warm, casual dining experience with a three-meal-a-day menu, featuring world-renowned chef Todd English’s signature interpretive Mediterranean cuisine, as well as a variety of coastal dishes prepared using high-quality, seasonal, and fresh ingredients. Olives Atlantis features an expansive open kitchen where English’s team prepares dishes from a rotisserie grill, where guests can enjoy made-to-order cuts of meat and grilled fish, such as the fresh catch-of-the-day. The Raw Bar offers a large fresh seafood display with daily offerings of shellfish, clams and oysters, and a wood-burning oven showcasing English’s infamous thin-crust flatbread pizzas. The one-of-a-kind, Italian-made SuperNova pasta machine produces a selection of fresh, handmade pasta dishes that entice and delight patrons. Guests can also sit and sip on Olives’ award-winning wines and delicious cocktails as they take in the energy and excitement of the Atlantis Casino. The restaurant is open until 3:00AM to satisfy late-night dining requests for those guests in the casino or Atlantis’ adult nightclub, Aura.
