Raised in a small town outside Paris, Chef Ludovic Audaux grew up cultivating his passion for classic French cooking. From the age of four, he spent countless hours with his father, also a chef, surrounded by the energy and flavors of a professional catering kitchen.

“I was raised in a very culinary-oriented family,” he says. “I’ve always been in a kitchen environment, we talk, live and breathe food.”  




Chef Audaux spent his formative years studying professional baking and earned a scholarship at the age of 15. During that time, he completed a rigorous hands-on apprenticeship that would launch his career.


“My adventure as an apprentice allowed me to touch every aspect of the profession,” he says. “I had the opportunity to work from small shops to renowned restaurants.” 


Chef Audaux later moved to Paris to train with renowned chefs in esteemed restaurants. He continued formal education at CEPROC Culinary Center in Paris, where he earned a degree in Arts Boulangers and a distinction as Chocolate Master. It was there that he refined the art of transforming traditional desserts into exquisite plated presentations. For several years, Chef Audaux served as Executive Chef at five-star hotels in Dubai and the United Arab Emirates. He continued to innovate while scaling to the high volumes of a resort.

“Nothing always works the way you planned, so you need to stay flexible and adapt to every situation,” he says.

Chef Audaux’s desire to travel and discover new cultures brought him to the Atlantis Paradise Island as Executive Pastry Chef. Today, he oversees the resort’s dessert and pastry program. He continues to expand his repertoire of creations that burst with unique flavors, all with an ode to his French culinary roots. Creating over 3,000 desserts every day, he delights guests with chocolate bijoux, pastries, specialty cakes and seasonal menus. Chef Audaux recently hosted the Taste of Paradise event, a two-week celebration of gourmet dishes and culinary artistry from around the world.

“Everything comes back to the basics as a full circle, as we are always seeking for the best of the best,” he says.
